Leek, potato and mushroom soup

Easy, easy soup, made in minutes. Perfect for a warm dinner.

Ingredients

  • 5  large potatoes, peeled and chopped (organic of possible)
  • 1 box of button mushrooms washed and chopped
  • 2 leeks washed and chopped (white part only)
  • Boiling water
  • Salt and Pepper

To make
Fry the leeks in 4-5 tablespoons of boiling water till they are soft. Add in the mushrooms. Let them sweat alittle. Add in the potato’s. Cover with boiling water (about 2 cm above the vegetables). Bring to the boil and then lower the heat. Cook till all the vegetables are soft.


Blend till smooth. Add salt and pepper to taste.
