Sandwich idea’s

Let’s face it, we are all are so short of time.  So what can we do to save time but still have a healthy meal?

A sandwich, so easy and if a little thought is added, it can be so nutritious.

Here are 5 sandwich filling ideas that are healthy and easy:

  1. Goat cheese feta + pesto + tomato slices + rocket leaves
  2. Avocado + boiled egg sliced + tomato + 2-3 olives pitted and sliced +dash of sea salt
  3. Tahini + shakshuka egg + sliced fresh cucumber
  4. Avocado + smoked salmon + capers + dash of lemon juice + cracked pepper
  5. Hummus + spinach leaves + grated fresh beetroot/carrot

BTW, this was my lunch today: home-made spent rolls with avocado spread + millet & mung bean patties!
